That’s if we are keeping it traditional. But you have to have some type of potato.
That’s just non-negotiable. There is just something about having meatloaf with a side of pillowy mashed potatoes that indescribable.
You will need:
- Russet potatoes
- Whole milk
- Butter
- Salt
- Black pepper
Steps to make this recipe:
Peel and dice potatoes. Rinse and drain potatoes.
Place in a pot with 4-6 cups of water. Boil on medium heat for 20 minutes or until fork-tender.
Once potatoes are done, drain water and add to a bowl. Add milk, butter, salt, pepper and stir pressing potatoes together while stirring.
Another great way to make this recipe is to leave all or most of the skin on the potatoes. This gives the potatoes and little extra texture and flavor.
Speaking of that, I think I’m going to have to make them that way next time I make meatloaf. And if you are going to leave some of the skin on, you want to make sure that you wash your potato skin really well.
Typically I rinse them under warm water and scrub them with my hands. Then pat them dry with a towel or paper towel.
Keep in mind that if you include the skin, you may need to add more milk, butter, etc. to the recipe.
You want to make sure that you don’t overcook your potatoes…
The recipe calls for the potatoes to be cooked for 20 minutes, but that can definitely vary according to how large or small you cut your potatoes.
Once they become fork tender they are done. They will look somewhat translucent.
I have overcooked them before and had to start over. Since they are boiled in water, they are still saturated even after draining them.
So since I overcooked them, with the extra saturation they just did not come out right. Once I started mashing them they just turned to mush. It happens lol.
We always like to include these tips and hope they provide value to those who visit this blog.
Enjoy!
